  SAD/GSD Dairy Tour
Buses depart from Hyatt Place West Palm Beach (student HQ) The Rucks family has been milking cows in South Florida since the mid-1930s. Today, Milking R Dairy owners Sutton and Kris Rucks milk 1,200 cows in Okeechobee and operate a successful agritourism program. Their dairy is National Dairy FARM Program certified, which proactively addresses the concerns of consumers, retailers, and processors interested in how their food is produced. This on-farm audit assesses areas including animal care and wellness, environmental stewardship, employee training, milk safety and milk quality. The Ruckses are committed to the educating the South Florida community about the integrity of production practices and benefits of technology use in the dairy industry. They tell their dairy story through exposure to daily life on a large and modern farm-engaging the tourist in interactive and enjoyable experiences at Milking R Dairy. Students, both undergraduate and graduate, are given first opportunity and the tour will be offered to professional members on a remaining availability basis.

  Dairy Records Mgmt Workshop (AM)
In 2020, Dairy Records Management Systems (DRMS) will bring us two workshops on records management, both on Sunday. Session 1 is from 8:00 am to noon and session 2 is from 1:00 to 5:00 pm. The first session is designed for PCDART users at the beginner/novice level; we will discuss the basics of using PCDART in dairy herd data analysis, navigating through PCDART, and developing reports/graphs to aid in analyzing dairy information for daily decisionmaking by herd personnel and consultants. Key features of PCDART will be demonstrated using example herds. The second session is intended for experienced/advanced PCDART users; this session will NOT discuss making reports or graphs in PCDART; it will assume that participants already possess these skills. The primary goal of the session is to demonstrate how a combination of DHI Reports and PCDART tools can be used to analyze dairy farm data and draw management conclusions from the results. Data from the following major herd management areas will be used as examples: (1) Reproductive Performance; (2) Mastitis and Milk Quality Assessments; (3) Milk Production Data Analysis on Herd and Individual Cow Levels; (4) Young Stock; and (5) Health and Transition.

9:00 am - 5:00 pm
  NANP Nutrition Models Workshop
The National Animal Nutrition Program (NANP) Nutrition Models workshop will use lectures and exercises to illustrate how mathematical models are constructed, evaluated, and applied toward problems in animal nutrition. Several modeling approaches are covered, but particular emphasis is given to dynamic, mechanistic models. The workshop will give attendees a basic fluency in mathematical modeling and, in so doing, advance their use of models in nutrition research.

Processing and Restructuring Dairy Food Products for Optimal Nutritional Delivery and Health
ADSA International Partnership Symposium: Riddet Institute - AgResearch, New Zealand This one-day symposium (on Wednesday) on the topic of structural nutrition will be presented by researchers from two ADSA partner organizations in New Zealand: AgResearch and the Riddet Institute. The efficacy of health-conferring components in dairy food products is affected by their structural location within dairy products, which in turn, is influenced by processing conditions and ultimately by digestion. This leads to opportunities to maximize nutritional delivery by targeting specific processing technologies to engineer structure in dairy products. The relationship between structural attributes and product functionality, in particular the dynamic aspects of release of nutrients and bioactive compounds, will be highlighted. Complex interactions between food, the gut microbiota, gastrointestinal motility, food structural breakdown, enzymatic digestion, and the transport of digestive contents affect nutrient uptake in humans.
