Lipids represent a small portion of the diet but have a large impact on rumen fermentation and post-absorptive metabolism. The value of milk fat has increased in proportion to other milk components and lipid supplements are some of our most expensive ingredients providing strong incentive to managing both rumen available and bypass fatty acids. Work over the last two decades has demonstrated the importance of bioactive trans fatty acids on milk fat synthesis and work over the past decade has demonstrated the importance of omega-3 fatty acids in health and reproduction and functional differences between palmitic and stearic acid. Additionally, the massive growth of the palm oil industry has had huge impacts on the type and diversity of available fats. As a human food, odd and branched chain fatty acids have emerged as bioactive fatty acids and there has been a paradigm shift in the perception of saturated fatty acids.
This conference will build upon the successes of fatty acid Discover Conferences from the last decade, serving as an update and comprehensive review and discussion of fatty acids in the current decade. The conference will draw on current data and identify both gaps in knowledge and opportunities to apply the current information.
Domestic and international members of the research and academic community, leading consultants and extension specialists, industry leaders involved in supplying fat supplements to the dairy industry, and members of governmental and regulatory agencies are encouraged to participate in this interactive program. Graduate students and early career professionals are especially encouraged to attend.
